WThis is a simplified version of a beverage from our latest cocktail list. This is a party-sized prepared mix that is bursting with flavours of a Christmas time, rendering it excellent for your celebration. Save the extra syrup you can use for morning drinks, desserts, or for additional servings of the drink.

Serves 10 guests
To make the Clementine Cordial (yields 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
Ingredients for the Cocktail (makes 850ml, serving 10)
400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml clementine cordial (see above)
A few cranberries, to garnish
Mandarin essential oil, for finishing
Method
For the Citrus Syrup: Combine the listed items into a pot, heat until it reaches a gentle boil, stirring so the sugar melts. After that, take off the stove allowing it to reach room temperature completely. Decant into an clean bottle, close it and refrigerate it chilled, where it will keep for around one month.
To make Premix: Pour the specified spirits and syrup into a sizeable container, let it rest for an hour, then strain preferably using a fine cloth, to ensure it's completely strained.
To serve: Pour 85ml from the cocktail base into a mixing glass filled with ice, and agitate carefully for a minute to cool it down. Filter into an frosted cocktail glass or equivalent, garnish with some cranberries adding the final touch using a light spray of the essential oil over the drink.
